O! Pumpkin pie!

Happy Thanksgiving!

This year was a little bit different. Mom is spending time in lovely, sunny San Diego and we are here in Seattle enjoying the rain. But of course, what would a holiday be like without baking something amazing. Left with a sweet pumpkin, I decided it would be only fitting to have Olivia over and attempt to bake a Fresh Pumpkin Pie.

Our victim (can you see? he is sweating in fear!)

Mr. Pumpin, the victim.

Olivia gives him a good wack!

Chop! Chop!

Ta-da!

Baked pumpkin

A bit squishy...

The lovely, homemade, pie crust chilling in the freezer

Burrrrrrrr

What if we just put the ingredients in the pumpkin, glue it together and serve?

Mmhmm

Olivia going in for the baby … erm … pumpkin mush

Delicious!

We just about killed the blender… oops

Pumpkin guts!

Pumpkin guts (measuring out the pumpkin puree so we can smoosh out the water)

One cup...two cup...

Pumpkin pancake!

Flatter than a pancake

Mixing in the dairy goodness

Dairy products

Ready to bake

Mmmmmmmmm

What to do with the seeds? Well, cook them of course

So good!

Finished product, just waiting to be eaten!

The end!

Now this is one pie I am ready to dig into… And with the left over pumpkin puree, about 4 cups, I think I will be making some pumpkin bread. Any suggestions?

Mmm, looks delicious. (Even more so in person.)

We’ll try and save you a slice of Olivia’s apple pie.

mmmmm! I ended up having to making an apple pie as pumpkins are no where to be found anymore :( We definately need to work out our baking agenda for Christmas break!

I’m very impressed!

I’m never going back.
